THE STORY

It is written in history that a great coffee origin once ruled the blossoming lands of Sterling where doe and crustaceans once co-existed and thrived on 100% artisanally roasted coffee. In its young era, Sterling was privileged to possess the magical crop of El Borbollón and crafted some of Portland’s finest blends, which we know today as Blendo Stupendo.

Over the years, Sterling Coffee earned its reputation and accolades off the consumption of El Borbollón through the offerings of Stupendo and its single origin offering, which undoubtedly contributed to the rise of this superb coffee kingdom.

The magic of this El Salvadorian coffee is said to come from volcanic soil of the Santa Ana hills,and harvested with such devotion by generational farmers, the Alvarez family, that its enchanted properties grants roasters immaculate roasting and consumers a captivating flavor experience.

Eventually, Sterling and El Borbollón mutually parted ways to embark on their own journeys in service to coffee-lovers alike. But recently, the paths of the two old friends led to a reunion that may promise a bountiful companionship once again.

BREWING RECOMMENDATIONS 

Brewing coffee shouldn't be difficult, so let's keep it simple.

On an auto drip or pour over, a good brewing ratio to start with is 1:16 (aka, the golden ratio) of coffee to water. For example, when making one 9-10oz mug of brew, 20 grams of coffee with 320 grams of water should do the trick. Fine tune the brew to your desired taste by incrementally adjusting the measurements. 

Have a home espresso bar setup? At our cafe we typically aim for a 30g double shot (or up to 35g with light roasts) using 20g of ground coffee and extract between 28-32 seconds. Voilà!

Whether you want to extract espresso, polish your brew on a chemex, enjoy the richness through a French press, or simply brew on drip -- Make it yours!
